The Rye Bread Project’s first initiative, ‘Smørrebrød Table’, was founded and formed to offer a collaborative process for creative problem solving for specialists from many fields of research and practice, ranging from organic local farmers, bakers and chefs to international government officials, green regional ecological planners, public health experts, educators and parents. It resulted in a two event days in November of 2010. The first event was a facilitated lunch discussion on November 10th. The second event was a public smørrebrød feast on November 14th. Both were hosted by New Amsterdam Market in New York City.

About the video launch:
The video about the Rye Bread Project was created by Little Bean Productions and launched on Saturday, October 22nd of 2011, in the Union Square pavilion in New York City as part of a special event called Greenmarket New Nordic Cookout — A Taste of Denmark co-hosted by  GrowNYC/Greenmarket and The Consulate General of Denmark. The Crown Prince and Princess of Denmark attended as special guests, as did Ambassador Consul Jarl Frijs-Madsen of the Consulate General of Denmark in New York, and Bob Lewis, co-founder of New York City’s Greenmarket. The video was showcased alongside Nordic-inspired foods prepared by several visiting prominent Danish chefs: René Redzepi of restaurant Noma, Claus Henriksen of Dragsholm Slot and Adam Aamann of Aamanns. In a continuation of the emphasis and exploration begun by the Rye Bread Project a year before in New Amsterdam Market, the Nordic Cookout presented a number of chefs’ translations of the Nordic Diet and it provided a platform for exploring the valuable relationships we all can have with local ecologically-minded family farmers and other food producers and the ingredients they grow.
